what is the name of the science on how streams behave?

hydrodynamics ... the dynamics of fluids ...

Which is a black science (the phrase is my own invention I think. It's a combination of black magic and science ;)).
Fluids are highly chaotic. At best presently science can come up with good approximations of what will happen, but every so often something throws fluidicists for a loop, and they just have to shrug and say "heck if I know why, fluids are unpredictable at times."
